Japanese cuisine is popular the world over. Japan proudly claims a rich and varied culture surrounding its cuisine. The world of Japanese cuisine has a long history, which is changing over the centuries. It is rich in unique traditions and steady customs. Perhaps, Japanese cuisine is an example of originality, diversity and usefulness, which is why it is one of the favourite food of many people living in different parts of the World including Pakistan.

However, when most of us think about Japanese food, we automatically think about sushi; whereas the truth is that Japan has an amazing, unique and varied cuisine that goes beyond just fish. The traditional cuisine of Japan or kappo is based on rice with miso soup and other dishes; there is an emphasis on seasonal ingredients. Side dishes often consist of pickled vegetables, and vegetables cooked in broth. Seafood is common, often grilled, but also served raw as sashimi.

One of the first things you notice about a Japanese meal is that traditionally all the different elements are separated into small dishes.

In Karachi, we have a few good Japanese restaurants including Fujiyama, Avari Towers, which serves authentic Japanese cuisine. Recently, Fujiyama has introduced its Express Lunch menu which is not only scrumptious but is pocket-friendly, too. Last week, we had a chance to taste their Express Lunch and what a delightful experience it was. Chef Carlito (their Japanese chef) especially prepared an exciting menu which includes/consists of two appetizers, two soups, two main course meals and two desserts. You can choose one from each category to make your own meal. Since we were two, we decided to go for different dishes so that we could share and taste the entire menu. I ordered Yakitori with Vegetable Tempura, an elegant-looking appetizer, whereas my colleague opted for Nagima Yaki (Rolled beef) with spicy Teriyaki sauce. Both appetizers were yummy. Yakitori are grilled chicken skewers made from bite sized pieces of meat and Negima yaki is usually made with thinly sliced beef. Then we savoured our soups. The consistency in my Creamy seafood and Mushroom Soup was perfect, however, my colleague insisted that her Japanese Miso Soup (with Wakame & Spring Onion) was better than the Mushroom Soup. Let me tell you guys that Miso Soup is served before the main course in mostly every meal, making it a must try if you really want to emerge yourself in the Japanese gastronomic culture.

It's time for the main course. The aroma of delicious Tori Teriyaki with spicy Teryaki sauce was irresistible. It was served with garlic rice. Teriyaki is actually means 'shiny grilled chicken, and it refers to the clear lacquer-like glaze that's created when the sugars in the teriyaki sauce caramelise. The sauce used for teriyaki is generally sweet, although it can also be spicy. The other main course Gyu Katsu (deep-fried beef fillet coated in Japanese crumbs) with Tonkatsu sauce was equally delectable. Tonkatsu sauce is a sweet and tangy Japanese condiment used for dipping.

For those with sweet tooth, there Express Lunch menu offers two desserts: Green tea flavoured ice cream and sliced fresh seasonal fruits. Both desserts are light and tasty. You can indulge in meetha without worrying about gaining extra calories. So, don't hesitate to delve right in and explore these dishes that are heavily entwined with the culture of Japan.
