The temperatures are dropping and nothing beats the hot steamy soup in this chilly weather. Warm your body with a bowl of 'Hot & Sour Soup' especially prepared by Chef Syed Abdul Qadir of Beach Luxury Hotel, Karachi. This lip smacking soup recipe will have you satisfied and snug as a bug on the coldest winter days. Happy Winter!

I N G R E D I E N T S

Chicken boneless (shredded) 1 kg

Oil 150 gms

Ginger garlic paste 100 gms

Cabbage (shredded) 100 gms

Carrots 100 gms

Capsicum (shredded) 50 gms

Spring onion (sliced) 150 gms

Black mushroom (soak in water and cut in to thin slices) 20 gms

Soya sauce 20 ml

Vinegar 50 ml

Chilli sauce 20 ml

Tomato ketchup 150 ml

Chicken seasoning powder 20 gms

Salt 10 gms

Black pepper 10 gms

Beaten eggs 4

Corn flour (dissolved in 2 cup waters) 80 gms

Sesame oil 10 ml

Chicken stock 3 ltrs

M E T H O D

  • Make chicken stock first by boiling chicken bones in water for 1 hour.
  • Wash and cut chicken into slices or shred it.
  • Now peel off and shred carrots, cabbage, capsicum and spring onion.
  • In a wok or pot, heat the oil and saute white spring onion, ginger garlic paste and chicken for few seconds.
  • Add the shredded carrots, capsicum and mushrooms and saute for few more minutes. After this, add chicken stock.
  • While the soup is boiling, add soya sauce, tomato ketchup, chilli sauce, vinegar, salt, pepper and chicken powder for taste.
  • Now add corn flour mixture to thicken the soup and before closing fire, add beaten eggs slowly in the end.
  • Pour some drops of sesame oil on top and serve the soup with Fish or Prawn Crackers. Enjoy!
