INGREDIENTS
Eggs 2
Caster sugar 6 tbsp
Vanilla essence ¼ tsp
Milk 400ml
All-purpose flour (sifted) 380g
Cooking oil 4 tbsp
Baking powder 2 tsp
Chocolate chips as required
Icing sugar as required
Chocolate syrup as required
Chocolate chips as required
DIRECTIONS
* In a bowl, add eggs, caster sugar, and vanilla essence & whisk well.
* Add half quantity of milk & whisk well.
* Add all-purpose flour & whisk again.
* Now add remaining milk and whisk well until smooth batter is formed.
* Add cooking oil, baking powder & whisk again, cover & let it rest for 5 minutes.
* Heat griddle, on low flame, add ¼ cup of prepared batter, add chocolate chips in the middle of the batter then top with batter to cover the chocolate chips.
* When bubbles start appearing around the edges, lift up the edge and make sure the underside is golden then flip and cook until done.
* Repeat with remaining batter (makes 12-14).
* Sprinkle icing sugar, drizzle chocolate syrup, decorate with chocolate chips & serve!
