Originally a Burmese dish, this broth of noodles, chicken, curry and chips garnish is now a very popular dish in Pakistan. If you have been curious to know how this bowl of deliciousness is made, this week You! shares the recipe of the notorious ‘Chicken Khaowsuey’. Happy cooking!

Ingredients

For Curry

Ginger 1 inch piece

Garlic 3-4 cloves

Curry leaves 10-12

Green chilli 2-3

Cumin seeds (roasted & crushed) 1 tsp

Turmeric powder 1 tsp

Yogurt 3/4 cup

Coconut milk powder 1 packet (50 gms)

Gram flour (sifted) 1 cup

Water 3 cups or as required

Cooking oil 2 tbsp

Salt 11/2 tsp or to taste

For Chicken Curry

Cooking oil 3/4 cup

Onion (medium & sliced) 2

Chicken (boneless cubes) 600 gms

Ginger garlic paste 1 tbsp

Coriander powder 1 tbsp

Cumin seeds 1 tsp

Salt 1 tsp or to taste

Red chilli powder 1 tsp or to taste

Turmeric powder 1/2 tsp

Green chilli (crushed) 1 tbsp

Tomatoes (medium size, sliced) 2

Yogurt (whisked) 3 tbsp

Garam masala powder 1 tsp

For Assembling

Boiled spaghetti

Curry

Cooked chicken

Fried Garlic

Fresh coriander chopped

Fried onion

Crushed Red chilli

Lemon juice

Slim chips

Method

  • For preparing curry: In a grinder, add ginger, garlic, curry leaves, green chillies, cumin seeds, turmeric powder, yogurt, coconut milk powder, gram flour and water. Blend until well combined & set aside.
  • In a pot, add cooking oil, more curry leaves and mix. Add the blended mixture and water. Mix well & bring it to boil.
  • Cover partially and cook on low flame until thickens (45-50 minutes) and keep mixing in between. Add salt, mix well & set aside.
  • For preparing Chicken Curry: In a pot, add cooking oil, onions and sautŽ until translucent. Add chicken cubes and mix well until changes colour. Add ginger garlic paste and mix well.
  • Add coriander powder, cumin seeds, salt, red chilli powder, turmeric powder and mix well for 2 minutes. Add green chilli and tomatoes, mix well and cook until tomatoes are soft (approx. 4-5 minutes).
  • Add yogurt and mix well. Then add garam masala powder and mix well. Cover partially and cook on low flame until oil separates (15 minutes) & set aside.
  • Boil Spaghetti: In a pot, add water, salt and bring it to boil. Add spaghetti and boil uncovered for 12-15 minutes. Strain & rinse with tap water & set aside.
  • Assembling: In a serving dish, add boiled spaghetti, curry, cooked chicken. Garnish with fried garlic, fresh coriander, fried onion, red chilli crushed, lemon juice, slim chips & serve!
