These cheesy pizza roll-ups are very quick and easy to make. This is perfect for kids’ lunch box for school or a nice snack for an intimate garden party. Ingredients

For Pizza dough

Lukewarm water 3/4 cup

Sugar 1/4 tsp

Yeast 2 tbsp

Flour 3 1/4 cups

Salt 1 tsp

Oil 3 1/2 tsp

Topping

Pizza or pasta sauce (prepared) 1/4 cup

Cheese (shredded) 1/2 cup

Pepperoni (finely chopped) 2 tbsp

Olive oil 1 tbsp

Sauteed onion 2 tbsp

Garlic 4 tbsp

Spinach (chopped and saute with garlic) 1/2 cup

Tomatoes (medium, chopped) 2

Method

  • To make the dough, in a large bowl, mix together the flour, sugar and salt.
  • Make a well in the centre, add the yeast and immediately pour a small amount of the lukewarm water on the yeast. Add the salt, oil and remaining water, mix together and lightly knead the dough.
  • Grease a large bowl and place the dough in it. Cover with plastic wrap and place in a warm place for up to 2-3 hours or until double in size.
  • Preheat oven to 350 degrees and generously coat a rimmed baking sheet with cooking spray.
  • Roll dough into a 10 inch square on a floured surface, then spread pizza or pasta sauce over dough.
  • Sprinkle the cheese over the sauce, top with pepperoni, sauteed onion, garlic spinach and chopped tomatoes.
  • Roll up dough to enclose filling, then cut roll crosswise into 10 slices. Place those slices cut side down on baking tray and brush tops with oil.
  • Bake until golden brown for about 15 min.
