These cheesy pizza roll-ups are very quick and easy to make. This is perfect for kids’ lunch box for school or a nice snack for an intimate garden party. Ingredients
For Pizza dough
Lukewarm water 3/4 cup
Sugar 1/4 tsp
Yeast 2 tbsp
Flour 3 1/4 cups
Salt 1 tsp
Oil 3 1/2 tsp
Topping
Pizza or pasta sauce (prepared) 1/4 cup
Cheese (shredded) 1/2 cup
Pepperoni (finely chopped) 2 tbsp
Olive oil 1 tbsp
Sauteed onion 2 tbsp
Garlic 4 tbsp
Spinach (chopped and saute with garlic) 1/2 cup
Tomatoes (medium, chopped) 2
Method
To make the dough, in a large bowl, mix together the flour, sugar and salt.
Make a well in the centre, add the yeast and immediately pour a small amount of the lukewarm water on the yeast. Add the salt, oil and remaining water, mix together and lightly knead the dough.
Grease a large bowl and place the dough in it. Cover with plastic wrap and place in a warm place for up to 2-3 hours or until double in size.
Preheat oven to 350 degrees and generously coat a rimmed baking sheet with cooking spray.
Roll dough into a 10 inch square on a floured surface, then spread pizza or pasta sauce over dough.
Sprinkle the cheese over the sauce, top with pepperoni, sauteed onion, garlic spinach and chopped tomatoes.
Roll up dough to enclose filling, then cut roll crosswise into 10 slices. Place those slices cut side down on baking tray and brush tops with oil.
