Onion powder 1 ½ tsp
Paprika powder 2 tsp
Dried oregano ½ tbsp
Sugar ½ tsp
Garlic powder 1 tsp
Black pepper powder ½ tsp
Himalayan pink salt 1 tsp or to taste
Red chilli powder 1 tsp or to taste
Cumin powder 1 tsp
Water 1 ½ cup
Milk powder ½ cup
Cream (room temperature) ½ cup (100ml)
Cooking oil 3 tbsp
Boneless chicken (cubes) 400g
Lemon juice 1 ½ tbsp
Yellow bell pepper (cubes) 1 medium
Red bell pepper (cubes) 1 medium
Onion (cubes) 1 medium
Capsicum (cubes) 1 medium
Elbow macaroni (boiled with salt) 250g
Cheddar cheese (grated) 100g
Mozzarella cheese (grated) 100g
Fresh coriander (chopped)
* In a bowl, add onion powder, paprika powder, dried oregano, sugar, garlic powder, black pepper powder, pink salt, red chilli powder, cumin powder and mix well. Fajita seasoning is ready.
* In a small jug, add water, milk powder, and cream, whisk well and set aside.
* In a wok, add cooking oil, chicken and mix well until it changes colour.
* Add half quantity of prepared fajita seasoning, lemon juice, mix well and cook for 4-5 minutes and set aside.
* In the same wok, add cooking oil, yellow bell pepper, red bell pepper, onion, capsicum, remaining fajita seasoning and cook on medium flame for 2-3 minutes.
* Add prepared milk and cream mixture, mix well and cook on medium flame for 1-2 minutes.
* Add boiled pasta, cheddar cheese, mozzarella cheese, mix well and cook until cheese melts.
* Add cooked chicken, fresh coriander and give it a good mix.
* Garnish with fresh coriander and serve!
