A mince pie is a sweet pie of English origin, filled with a mixture of dried fruits and spices called ‘mincemeat’, traditionally served during the festive season. This week You! collaborates with Cooking Expert, Lubna Shariff, who shares the recipe of Fruit Mince Pie.

INGREDIENTS

Flour 11/2 cup

Castor sugar 1/4 cup

Butter 120 g

Egg yolks 1

Cold water 1 tbsp or as needed

Salt a pinch

Pie Filling

Egg yolks 2

Vanilla pod 1

Castor sugar 1/2 cup

Milk 11/2 cup

Corn starch 11/2 tbsp

Fruits (cut in small pieces) of choice

METHOD

Pie case

  • For the dough: Knead sifted flour with sugar, butter, egg yolk, salt and water. Knead it turns into firm dough. Keep the dough in fridge for 20 minutes
  • Roll the pastry into a greased removable bottom case.
  • Set it and cute of the excess.
  • Bake for 10mins until golden.

Pie Filling

  • Heat the milk with vanilla pod.
  • Add the yolks and sugar, and whisk until fluffy.
  • Add the corn startch and mix vigourously.
  • Let it cool. Cut the fruits (you can use pear, peach or strawberry) and set it in the pie case.
