 Tired of all the barbecue parties? Well, try a desi meaty karhai at home. A spicy curry, the dish combines the richness of meat with the tangy flavour of tomatoes and spicy chillies. This week, You! has collaborated with food advisor and designer, culinary expert and executive chef Gulzar Hussain, who shares his lip-smacking recipe of ‘Mutton Karhai’. I N G R E D I E N T S

Mutton (with bones)  1 kg

Tomatoes      1/2 kg

Green chillies (small)  5-6

Green chillies (big)    5-6

Ginger garlic paste    2 tbsp

Black pepper (coarsely ground)       1 tsp

Cumin (coarsely ground)      1 tsp

Oil/ Ghee       as required

Salt    according to taste

M E T H O D 

  • In a pan, add mutton, tomatoes and green chillies (big ones) together and cook well until the mutton gets tender.
  • Now add ghee and stir till the oil comes on the surface.
  • Add the remaining spices and green chillies (small) and let it cook on low heat.
  • Mutton Karhai is ready to be served.
