Last week, You! shared a recipe for school kids and their moms who often face a hard time in deciding what to pack for lunch. This time around, Chef de Cuisine of La Mamma restaurant brings another power bite recipe of ‘Snails and butterfly sandwiches’. It’s easy to make and kids will enjoy a healthy yet scrumptious meal at school. Happy lunching!

I N G R E D I E N T S

Brown bread   2 slices

Hardboiled eggs        2

Low fat mayonnaise  1 tsp

Natural yoghurt        1 tsp

Cherry tomato          1

Red & yellow capsicums (julienne)   2 - 3 pieces

Cucumber & olives     1-2

Salt and pepper        a pinch

M E T H O D

  •  Peel the eggs and mash them with a fork.
  •  Mix low fat mayonnaise and yoghurt into the eggs.
  •  Remove the crust off the brown bread.
  •  Spread the egg mixture on the bread and roll.
  •  Now cut the bread roll in slices.
  •  Cut slices of red and yellow capsicums to make the butterfly body.
  •  Then cut the cherry tomato and cucumber to make the head and antennae of the snails.
  •  Serve some dried fruits as a healthy snack to go with the sandwich. Enjoy!
