Grilled cheese sandwich

In a medium-sized bowl, combine all the ingredients. Mix well. Spread on bread or use with your favourite crackers....



5 tbsp. butter, softened, divided

4 slices bread

2 c. shredded cheddar


Spread 1 tablespoon butter on one side of each slice of bread. With butter side down, top each slice of bread with about ½ cup cheddar.

In a skillet over medium heat, melt 1 tablespoon butter. Add two slices of bread, butter side down. Cook until bread is golden and cheese is starting to melt, about 2 minutes. Flip one piece of bread on top of the other and continue to cook until cheese is melty, about 30 seconds more.

Repeat for the second sandwich, wiping skillet clean if necessary.

Cucumber triple-deckers


1 – 2 cucumbers, thinly sliced

1 cup soft cheese

½ small bunch mint, finely chopped

1 tomato sliced

4-5 olives, sliced

9 thin slices bread

Salt to taste

Pepper to taste


Lay the cucumber slices on kitchen paper to dry. Whizz the cheese and mint with salt and pepper in a small food processor or with a hand blender. Stir in the olives, then spread the cheese mixture over 6 slices of bread. Reserve 12 slices of cucumber, and arrange the rest over the cheese. Top up with sliced tomatoes.

Layer up 2 slices of cucumber and tomato topped bread, then top with a plain slice. Repeat this twice more. Use a good knife to trim the crusts off the tripledeckers, then cut into triangles or four squares. Top each mini sandwich with another cucumber slice. Sprinkle with the remaining olives to serve.

Tasty dip


2 sweet corn cans

1 diced capsicum

½ cup chopped coriander

1 large apple cored and cubed

1 cup pineapple cubed

1/2 cup green onion - chopped

1 cup mayonnaise

1 cup sour cream

1 teaspoon pepper

1/2 teaspoon garlic powder

2 cups shredded cheddar cheese

2-3 bags of chips/crackers


In a large bowl, mix all ingredients except chips.

Chill two hours to overnight. Serve with chips or crackers.

Simple egg salad


8 hard-boiled eggs, peeled and chopped

3 tbsp. mayonnaise

2 tsp. lemon juice

1 tbsp. finely chopped green onion, leafy part

Freshly ground black pepper

Salt to taste

1 tsp mustard (optional)
