Olive oil 1 tbsp
Garlic (chopped) 1½ tbsp
Ginger (chopped) 1 tbsp
Green onion (white part) ¼ cup
Mushrooms (sliced) ½ cup
Instant oats ½ cup
Stock (low sodium) 3 cups or as required
Tomato paste 1½ tbsp
Peas ¼ cup
Carrots ¼ cup
Capsicum (cubes) 1 medium
Cabbage (chopped) 1 cup
Pink salt ½ tsp or to taste
Turmeric powder 2 pinches
Cumin powder ½ tsp
Green onion (leaves) ¼ cup
Black pepper (crushed) ½ tsp
Lemon juice 1 tbsp
Mint leaves (chopped) 1 tbsp
• In a pot, add olive oil, garlic, ginger, green onion white part. Mix well and sauté for 1 minute. Add mushrooms and mix well.
• Add instant oats and mix well for 1 minute.
• Add stock and mix well.
• Add tomato paste, peas, carrots, capsicum, cabbage, pink salt, turmeric powder, cumin powder, mix well & bring it to boil.
• Add green onion leaves, cover partially & cook on medium low flame for 12-15 minutes.
• Add black pepper crushed and lemon juice, and mix well.
• Add mint leaves and mix well.
• Garnish with green onion leaves, lemon wedges & serve hot!
