Rich in various nutrients, fibre and antioxidants, dates are popular throughout the world and are consumed as a rich dried fruit. While enjoying many of its benefits, however, you can also indulge in mixing dates with some sugar if you have a sweet tooth. Keeping this in mind, this week You! collaborates with Karachi’s Marriot Hotel Executive Pastry Chef Philippe from Germany, who shares his unique recipe of ‘Dates Cake’. Happy baking!

Ingredients

Dates without seed 110g

Flour 165 g

Baking Soda 4 g

Brown Sugar 95 g

Caster Sugar 95 g

Whole egg 60 g (1 big Egg)

Unsalted Butter 195 g

Heavy cream 220 g

Walnuts 55 g

Method

  • Pre heat the oven at 180 C.
  • In sauce pan pour the cream, butter and date, put on stove to medium heat and stir it until it is smooth and soft.
  • Mix the sugar, brown sugar and egg and beat it well until all sugar get melt.
  • Add the sugar mix to warm date mix (make sure it is not too hot, or you will cook the egg). Add the flour and baking soda. Mix gently.
  • Pour into unstuck cake loaf mold bake it for 30 minutes at 180.

Makes 8 portions / Preparation time: 45 minutes / Cooking time: 30 minutes. Oven 180 C.
