There’s just something about a pan of muffins fresh from the oven that makes everyone smile. Easy and delicious, muffins are the ultimate crowd-pleaser and make a perfect quick breakfast or snack. It’s easy to get creative with muffins by adding your favourite fillings. Ingredients

Whole eggs 3

Flour 150g

Baking powder 15g (1 tsp)

Milk 125g (1/2 cup)

Swiss cheese (diced) 100g

Mozzarella Cheese 200g

Tomato 250g

Olive Oil 15g

Chopped Basil 5g

Fine salt 3g (3 pinches)

White Pepper 3g (5 pinches)

Method

  • Dice the tomatoes, dry them and then fry in a pan with a bit of olive oil, salt and pepper.
  • Dice the mozzarella and chop the basil.
  • On a side, mix eggs, flour with baking powder. Slowly add in the remaining olive oil and warm milk.
  • Add the Swiss cheese, mozzarella and basil, and mix nicely with your hands. Pour into a non-stick cake loaf mould and bake for 25 minutes at 180 C.
  • Serve and enjoy! This recipe makes 10 portions.
