If you are a working mom and have kids who are fussy eaters, then it must be a task preparing for their meals, especially when it comes to providing healthy food for their lunch at school. Well, for that you need some quirky lunchbox recipes to make your life easy. Keeping this in mind, Movenpick Hotel, Karachi, held a cooking class showing two Power Bites school lunchbox recipes for women and children, focusing on nutritional ingredients and healthy cooking methods presented in a surprising, fun way. The two recipes were especially created by blogger mum, Fathima Mansoor from Dubai. The cooking class was conducted by Tanveer Hussain, Chef de Cuisine of La Mamma restaurant, where he prepared two healthy lunchbox recipes.

So, this week You! shares one of the special recipes called ‘Tortilla sleeping bags’ that are not only nutritious but easy to prepare. Happy munching!

Tortilla sleeping bags

I N G R E D I E N T S

Whole-wheat tortillas/wraps 2

Hummus        1-2 tbsp

Carrot (julienne)       1/2

Cucumber (julienne)  1/2

Red capsicum (julienne)       1/2

Cheese circles          2

Deseeded black olives for eyes and mouth

Veggies cut-outs to decorate the sleeping bags (cut flat pieces of vegetables by using a small cookie cutter)

M E T H O D

  Spread hummus over the tortillas.

  Place the vegetable sticks down the centre. Fold the one side of the tortilla over the other.

  Then fold the other side over it, to make a sleeping bag. If it doesn’t stick, add some filling to the inside bit to seal it.

 Take the julienne veggies and make the hair around the cheese. Cut tiny bits of olives for the eyes and mouth and place the pieces to create the face. Place the cheese at the top of the sleeping bag and the veggies cut-outs on the tortillas to decorate.
