INGREDIENTS
Eggs (room temperature) 4
Caster sugar 1 cup
Vanilla essence ½ tsp
Cooking oil 1/3 cup
All-purpose flour 1 ½ cup
Baking powder 1 tsp
Himalayan pink salt 1 pinch
Milk (room temperature) 1/3 cup
Whipping cream (chilled) 400ml
Icing sugar 2 tbs
Vanilla essence ½ tsp
Pineapple syrup
Pineapples chunks
Cherries

DIRECTIONS
In a bowl, add eggs, caster sugar and beat well.
Add vanilla essence, cooking oil and beat until combined (don’t over beat the mixture).
Place a sieve on the bowl, add all-purpose flour, baking powder, pink salt and sift well.
Add milk and whisk until just combined and there are no lumps (avoid overmixing the batter).
Transfer the batter to a greased 8-inch baking pan lined with baking paper and tap few times.
Bake in preheated oven at 170°C for 35-40 minutes or until skewer comes out clean. Let it cool.
In a bowl, add whipping cream and beat well.
Add icing sugar, vanilla essence and beat well until stiff peaks form and set aside.
Remove cake from baking pan and with the help of a cake knife, horizontally cut two layers of cake.
Place first layer of cake on a cake strand, drizzle pineapple syrup and spread prepared frosting with the help of spatula.
Add pineapple chunks and spread a thin of frosting.
Place 2nd layer of cake and spread prepared frosting on it.
Now spread prepared frosting, cover all sides of the cake with frosting and refrigerate for 4 hours.
Decorate with whipped cream, pineapple, cherries and serve.
