Pineapple Cake


INGREDIENTS

Eggs (room temperature) 4

Caster sugar 1 cup

Vanilla essence ½ tsp

Cooking oil 1/3 cup

All-purpose flour 1 ½ cup

Baking powder 1 tsp

Himalayan pink salt 1 pinch

Milk (room temperature) 1/3 cup

Whipping cream (chilled) 400ml

Icing sugar 2 tbs

Vanilla essence ½ tsp

Pineapple syrup

Pineapples chunks

Cherries

DIRECTIONS

 In a bowl, add eggs, caster sugar and beat well.

 Add vanilla essence, cooking oil and beat until combined (don’t over beat the mixture).

 Place a sieve on the bowl, add all-purpose flour, baking powder, pink salt and sift well.

 Add milk and whisk until just combined and there are no lumps (avoid overmixing the batter).

 Transfer the batter to a greased 8-inch baking pan lined with baking paper and tap few times.

 Bake in preheated oven at 170°C for 35-40 minutes or until skewer comes out clean. Let it cool.

 In a bowl, add whipping cream and beat well.

 Add icing sugar, vanilla essence and beat well until stiff peaks form and set aside.

 Remove cake from baking pan and with the help of a cake knife, horizontally cut two layers of cake.

 Place first layer of cake on a cake strand, drizzle pineapple syrup and spread prepared frosting with the help of spatula.

 Add pineapple chunks and spread a thin of frosting.

 Place 2nd layer of cake and spread prepared frosting on it.

 Now spread prepared frosting, cover all sides of the cake with frosting and refrigerate for 4 hours.

 Decorate with whipped cream, pineapple, cherries and serve.
