Last week it was the yummy ‘Hummus’ and this time around it is ‘Baba Ganoush’, which is a common Middle Eastern and Mediterranean dip made with eggplant, tahina and some special spices. It has a creamy and somewhat smoky flavour. Want to try this dip at home? Well, this week You! has collaborated with Lal Majid, the chocolatier extraordinaire of Lal’s Patisserie, who shares her special recipe of  ‘Baba Ganoush’. INGREDIENTS

Eggplant ............       500 gms

Tahini ............112 gms

Lemon juice............    60 gms

Yoghurt  ............       244gms

Sumac ............ 5 gms

Sea Salt      ............  1/2 tsp

Garlic cloves (crushed)  ............   4

METHOD

  • Take the eggplant and burn the skin on the stove. When the skin starts to crack, peel it off and bake the eggplants for half an hour in the oven.
  • In a blender, grind together garlic, yoghurt, lemon juice and tahini sauce.
  • Add the baked eggplant and grind it on a higher speed.
  • Add sea salt and sumac to it and mix well. Your dip is ready to be served. Enjoy!
