This Mother’s Day surprise your mom with a hearty breakfast in bed and make her day extra special. Both of these recipes are a sure-fire winner, and you can whip them up in 30 minutes or less. In other words, no need to wake up at the crack of dawn to cook. Here are two easy to make breakfast ideas with delicious sweet and savoury recipes that she’ll truly appreciate.

Tomato Cheese Omelette

INGREDIENTS

Eggs 3

Milk 1 cup

Caster sugar 3 tbs

Baking powder 1 tbs

Salt 1 tsp

Vanilla essence 1 tsp

Unsalted butter (melted) 1 cup

Cream (room temperature) 1 cup

All-purpose flour (sifted) 2 cups

Cream (chilled)

Butter cubes

Maple syrup

DIRECTIONS

* In a bowl, add eggs and whisk well.

* Add milk, caster sugar, baking powder, salt, vanilla essence, butter, cream and whisk well.

* Gradually add all-purpose flour and whisk continuously until well combined and transfer to a squeeze bottle.

* Heat non-stick frying pan and grease with cooking oil.

* Add mixture in frying pan through squeeze bottle and cook on low flame until golden (12 minutes each side) (makes 5).

* Drizzle cream in between pancakes, add butter, drizzle maple syrup and serve!
