Mousse cups

INGREDIENTS

* White chocolate 300g

* Water as required

* Cream 100ml

* Whipped cream (chilled) 500ml

* Peppermint essence ½ tsp

* Green gel food colour ½ tsp or as required

* Plain sponge cake (crumbled)

* Green and white sprinkles

* White chocolate chips

* Wafer biscuit

DIRECTIONS

* Chop white chocolate with the help of knife and set aside.

* In a saucepan, add water, bring it to boil and place a heat proof bowl over it.

* Add chopped white chocolate, cream and whisk well until smooth.

* Let it cool.

* In a large bowl, add ice cubes and place another bowl over it, add cream, peppermint essence and beat until stiff peaks form.

* Add white chocolate and cream mixture and fold gently with the help of spatula and beat for 30 seconds and transfer 1/3rd of the mousse to another bowl and transfer to a piping bag.

* In remaining cream mixture, add green food gel colour and mix until well combined with the help of spatula and transfer to a piping bag.

* In serving glass, add crumbled plain sponge cake and press gently.

* Add a layer of white mousse then green mousse and garnish with green and white sprinkles, white chocolate chips and wafer biscuits and serve!
