Be it any occasion, ‘biryani’ is a specialty that has to be a part of the menu. And if you are tired of making the same old recipe of ‘biryani’, then you are in luck, as this week You! has collaborated with food advisor and designer, culinary expert and executive chef Gulzar Hussain, who shares his special recipe of ‘Sulaimani Biryani’. I N G R E D I E N T S

For Korma

Beef    700 gms

Ginger garlic paste    1 tbsp

Onion (sliced) 1

Yoghurt         1 ounce

Cardamom (small)     3-4

Cinnamon       2-3

Star anise      2-3

Whole red chilli (coarsely ground)    6-8

Whole black pepper   1 tsp

Oil      2-3 tbsps

Salt    according to taste

For rice

Sela rice        300 gms

Ghee   2-3 tbsps

Star anise      3-4

Bay leaf         3-4

Beef stock     as required

Salt    according to taste

For layering

Yoghurt         2-3 tbsps

Tomatoes (sliced)     1

Lemon (sliced)          1

Saffron essence       few drops

Yellow food colour     a pinch

M E T H O D

  • Korma preparation: First of all, take a pan and add oil into it. Now add sliced onions and fry it until golden brown. Add beef and spices and cook until it gets tender.
  • Set the korma aside.
  • In another dish, add ghee and saute whole spice. Now add stock to it.
  • Add rice and leave until it’s cooked through.
  • Layering: In a deep pan first set a layer of yoghurt, tomatoes and lemon.
  • Then layer korma and boiled rice simultaneously.
  • In the last, add saffron essence and yellow food colour and leave it on low heat.
  • Dish it out after the rice is completely cooked.
