Fanqie Jidan Mianb (Poached Noodles in Egg & Tomato Sauce)

I N G R E D I E N T S

Dried noodles  150gms

Eggs   2

Tomatoes      140gms

Chilli chopped           5gms

Soya sauce    10ml

Oil      15ml

Chopped ginger        4gms

Scallion chopped       15gms

Sugar  5gms

Chicken stock 100ml

Salt    3gms

M E T H O D

  •  Heat the wok, add beaten eggs and stir fry till the eggs are cooked.
  •  Then add the sliced tomatoes, soya sauce, chopped chilli, ginger, scallion, sugar and chicken stock. Stir.
  •  Cook for around four minutes, add salt and keep aside.
  •  Boil the noodles till they become al dente. Strain all the water.
  •  In a bowl place the boiled noodles and pour some egg and tomato sauce over the noodles. Serve!
