Heavy cream 1- 1/3 cup

Bittersweet chocolate (finely chopped) 1 cup

Unsalted butter (cut into 4 pieces) 2 tbsp

For the cake

Unsalted butter (softened, for the pan) as needed

Cocoa powder 10 tbsp

Bittersweet chocolate (finely chopped) 3/4 cup

Brewed coffee 2 tbsp

Eggs (separated, at room temperature) 9

Granulated sugar 1 cup

Salt 1/4 tsp
