For roulade

Unsalted butter 5 tbsp

Flour 6 tbsp

Whole milk 1 1/4 cups

Parmesan cheese 3 tbsp

Egg yolks (at room temperature) 6

Egg whites (at room temperature) 8

Salt 3/4 tsp

Black pepper 1/4 tsp

Cream of tartar 1/8 tsp

For Filling

Unsalted butter 1 tbsp

Spinach (stems removed, chopped finely) 1 cup

Tomatoes (chopped) 1/2 cup

Mushrooms (sliced) 1/2 cup

Green chillies (chopped) 1-2

Chilli flakes 1/4 tsp

Italian herbs 1/4 tsp

White pepper (freshly ground) 1/4 tsp

Olives (pitted & sliced) 1/4 cup

Cheddar cheese (grated) 1/2 cup
