I N G R E D I E N T S
Heavy cream 4 cups
Vanilla essence 1&1/2 tsp
Sugar (divided) 1 cup
Egg yolks 6
Hot water 8 cups
M E T H O D
- Start by preheating the oven to 325 degrees F.
- Now in a saucepan, pour the cream and add vanilla essence and set over medium-high heat. Bring to a boil.
- After the mixture has reached a boil, put it aside and cover it. Allow to sit for 15 minutes.
- In a bowl, whisk together 1/2 cup sugar and the egg yolks until well blended. Add in cream and stir.
- Pour the mixture into 6-8 ounce ramekins.
- Place the ramekins into a large cake pan or roasting pan. Pour enough hot water into the cake pan to come halfway up the sides of the ramekins.
- Bake for approximately 40 to 45 minutes or until the creme brulee is set, but still trembling in the centre.
- Refrigerate the ramekins for at least 2 hours.
- Remove the creme brulee from the refrigerator for at least 30 minutes prior to browning the sugar on top.
- Divide the remaining 1/2 cup sugar equally among the 6 dishes and spread evenly on top.
- Using a blow torch, melt the sugar till it forms a crispy top. If you don’t have a blow torch use the grill of the oven for browning of the sugar.
- Allow the creme brulee to sit for at least 5 minutes before serving.
