Orange 1
Lemon 1
Boneless chicken strips 700g
Paprika powder 1 tbsp
Himalayan pink salt 1 and ½ tsp or to taste
Garlic powder 1 tbsp
Chicken powder ½ tbsp
Black pepper powder 1 tsp
Onion powder ½ tbsp
Red chilli powder 1 tsp or to taste
All-purpose flour 1 cup or as required
Rice flour (optional) 4 tbsp
Water 1 cup or as required
Cooking oil for frying
Brown sugar 1 tbsp
Corn flour 2 tsp
Fresh parsley (chopped)
Lemon zest
* Take out orange and lemon zest with the help of a zester and set aside for later use.
* Cut the same lemon and orange into half, squeeze and take out the juice of lemon and orange and set aside for later use.
* In a bowl, add chicken, orange zest (1 tsp), lemon zest (1/4 tsp).
* In another bowl, add paprika powder, pink salt, garlic powder, chicken powder, black pepper powder, onion powder, red chilli powder and mix well.
* In the chicken, add 2 tbsp of prepared spice mix reserve remaining for later use, mix well and marinate for 30 minutes.
* In a bowl, add all-purpose flour, rice flour, prepared spice mix (1 tbsp) and mix well.
* Now coat marinated chicken in dry flour mixture then dip in water and again coat in dry flour mixture.
* In a wok, heat cooking oil and fry on medium flame until golden and crispy. If you’re air-frying then, place chicken strips in air fryer basket, spray cooking oil and air fry at 180C for 10-12 minutes flip in between.
* In a wok, add lemon and orange juice (1 cup), brown sugar, remaining spice mix (1 tbsp), lemon zest (1/4 tsp), orange zest (1 tsp), corn flour and whisk well.
* Turn on the flame, mix well and cook on medium flame until it thickens.
* Turn off the flame, add fried or air fried chicken and coat well.
* Sprinkle fresh parsley, lemon zest and serve!
