INGREDIENTS

Hot water as required

Green cardamom 5-6

Cloves 4-5

Salt ½ tsp

Orange food colour 2 tsp or as required

Rice (Sela - soaked for 1 hour) 750g

Desi ghee ½ cup

Sugar 2 and ½ cups or to taste

Cloves 3-4

Kewra water 1 and ½ tbs

Milk powder 1/3 cup

For garnish

Almonds (boiled and peeled)

Raisins

Pistachios (boiled and peeled)

Khoya

Dried coconut slices

Cham cham sweets

DIRECTIONS

* In a pot, add hot water, green cardamom, cloves, salt, orange food color, mix well and bring it to boil.

* Add rice, mix well and boil until 3/4th done then strain and set aside.

* In a saucepan, add desi ghee, let it melt and set aside.

* In a pot, add sugar, green cardamom, cloves, desi ghee, hot water and kewra water, turn on the flame and cook on medium flame until sugar melts.

* Add boiled rice, mix well and cook on medium flame for 8-10 minutes.

* Add milk powder, dried coconut, almonds, raisins, pistachios, melted desi ghee and mix well.

* Add khoya, cover with kitchen cloth and lid and steam cook on low flame for 10-15 minutes.

* Garnish with khoya, almonds, pistachios, dried coconut, cham cham and serve!

Strawberry Cream Delight

This Eid, beat the heat and treat yourself with this easy no-bake Strawberry Cream Delight dessert…

INGREDIENTS

Strawberry Jelly 80g

Hot water 1 and ½ cup

Strawberries 400g

Ice cubes as required

Cream (chilled) 400ml

Condensed milk ¾ cup

Instant jelly (strawberry flavour) 200g

Biscuit crumbs

DIRECTIONS

* In a bowl, add strawberry jelly, hot water and whisk well.

* Let it cool at room temperature until set.

* In a blender jug, add strawberries and blend to make a puree (approx. 1 and ½ cup) and set aside.

* In a large bowl, add ice cubes and place another bowl over it, add cream and beat well.

* Add condensed milk, strawberry puree and beat until soft peaks form and refrigerate until use.

* Chop strawberries with the help of knife (approx. 1 cup) and set aside.

* Cut jelly with the help of knife and mix well with the help of fork.

* Now add chopped strawberries and mix well.

Assembling:

* In a serving glass, add and spread strawberry and jelly mixture, biscuit crumbs, prepared strawberry cream mixture and top with strawberry and jelly mixture.

* Garnish with mint leaf and serve chilled!
